Seared Spinach with Roasted Garlic

  • 2 tbsp olive oil
  • 10 oz. baby spinach, washed and dried
  • ½ tsp black pepper, freshly ground
  • ¼ tsp salt
  • 2 tbsp coarsely chopped roasted garlic (about 12 cloves)

Place olive oil in large sauté pan over medium-high heat. Once oil is very hot, add spinach and sear for 1 minute. Add black pepper, salt and roasted garlic, and sauté until spinach is just wilted. Serve immediately.
