Saag "Paneer" Made with Tofu

Pure & Simple Tofu Saag

From Episode 6: "India"

  • 1 package extra firm tofu
  • 1 lemon (rind removed)
  • 1 lime (rind removed)
  • 1 clove garlic, minced
  • 1 tbs. ginger, minced
  • ½ tsp. salt
  • 1 tbs. grape seed oil
  • 1/2 chopped onion
  • 1 tsp. minced ginger
  • 1 tsp. minced garlic
  • 1 tsp. masala spice
  • 1 lb. baby spinach, chopped
  • 1 16 oz. can diced tomatoes

Mash together the lemon, lime, garlic, ginger, and salt. Cube the extra firm tofu and mix that with the citrus mash. Layer the tofu on a baking dish and place in a preheated 375 degree oven for 10-15 minutes.

In a large skillet heat the grape seed oil, add the chopped onion and cook for 5 minutes, add the minced ginger and garlic. Add the Chopped spinach and sauté until the spinach begins to wilt. Add the masala spice and the canned of chopped tomatoes and cook for an additional 3-5 minutes.

Remove the tofu from the oven and toss it with the spinach.
