From Episode 1: "Out of the Kitchen"
Split the two eggplants in half, rub the flesh with olive oil and season with salt and pepper. Grill the eggplants skins down, until the center is brown and soft in appearance. Spoon over with fresh tomato sauce and sprinkle with freshly grated parmesan cheese.
