Chicken Calabrese Pressini

Location: Food Exchange
Key Ingredients: Chicken, mozzerella, roasted red peppers
Gmark's Take: Flatter food is healthier food

Shortly after taking office in 2002, Mayor Michael Bloomberg instituted New York's highly controversial Panini Laws. These statutes compelled all deli owners to reserve at least 1/3 of their counter space for "the production and sale of Paninis, as defined in Article 2." Paninis are officially defined as "a flatish, hard bread, kind of like a stale pita, stuffed with leftovers and made palatable by grilling with cheese."

I consume a Panini today, not out of love for the food, but merely to fulfill my legally mandated quota. If you've ever had to spend an afternoon in Panini Court, you know enough to not mess around with the Law.

This is actually a variation on the Panini, known as the Pressini, which features much tastier bread. Pressini comes from the Latin press, which means "to smoosh on a grill," and ini, which means "sounds vaguely Italian."

Note the groovy beverage. USDA certified organic [0]. Although as a LIME employee, I think I should have at least gotten a discount.
