The other red meat boasts less fat than most white meats (even chicken), and has a taste Gourmet magazine touts as richer in flavor than beef. In addition, since many bison exclusively dine on wild grass, when compared to factory-raised beef, the planetary benefits are as big as the plains are wide.

While I'm not a big red meat eater, I'm all for replacing beef with bison. They have a smaller environmental footprint, healthier meat, and of course are a native species (in North America.)
As the previous commenter mentioned, bison doesn't taste like beef - fair enough, but neither does goat or lamb. A lot of people are into making patties from bison...hamburger and sausage are on my list of 'things to do with the parts you'd otherwise toss.' I'd bet a nice steak or pot roast would win over any meat eater.
I just can't figure out why it hasn't caught on yet. I'd buy it every time, but that, except for a one-time special, they don't have it in the local grocery stores.
