For Marinade:
2 scallions, white and green parts, thinly sliced
Juice of 1 lime
1 teaspoon sesame oil
1/4 cup soy sauce
16 ounces meat substitute strips, such as Morningstar Farms Meal Starters [1]
1 tablespoon canola oil, plus additional if needed for cooking
1 red onion, sliced
8 ounces carrots, sliced into coins
2 red peppers, cut into strips
1 pound broccoli, cut into bite-sized florets
1/2 pound snow peas
Combine marinade ingredients in a medium bowl. Toss with meat substitute strips, let marinate for 5 minutes.
Heat 1 tablespoon canola oil in a large sauté pan over medium heat. When the oil is hot, remove strips from marinade bowl with tongs, letting excess marinade drip back into the bow. Saute strips over medium heat until they are heated through and begin to brown.
Remove from pan, set aside, keeping warm under a tent of aluminum foil. Add more oil to the pan if needed, then sauté onions and carrots in pan for 3 to 5 minutes, stirring frequently.
Add peppers, broccoli and snow pleas, stirring and tossing frequently, for a few more minutes, until broccoli and snow peas begin to turn bright green.
Pour remaining marinade over vegetables, stirring to distribute, then cover pan and let steam for 3 to 5 more minutes, until vegetables are crisp-tender.
Add meat substitute strips back into the pan, tossing with vegetables to distribute and reheat. Serve with white or brown rice. Serves six.
