- 3 whole Beets, roasted, peeled, and sliced
- 4 oz soft goat cheese, broken into small pieces
- 6-8 Nasturtiums
- ¼ cup Dried apricots, chopped
- An Assortment of Fresh Greens
Dressing:
- Juice of half a lemon
- ¼ cup olive oil
- Salt
- Pepper
Coat the beets in olive oil, sprinkle with kosher salt, place in a roasting pan, and roast at 500 degrees for 45 minutes. The beets are ready when they are tender when pierced with a fork. Peel the skins off of the beets and slice them.
Assemble the salad by laying the greens on a platter, place the rest of the ingredients on top and dress the olive oil, lemon juice, salt, and pepper.
