Healthy Tuna Melt

2 cans minimal mercury tuna, such as Wild Planet

2 scallions, chopped

1 stalk celery, diced

2 tablespoons pistachios, chopped

1 tablespoon capers

3 tablespoons Greek-style nonfat yogurt

3 tablespoons light mayonnaise

1 teaspoon Balsamic vinegar

dash Tabasco sauce

salt and pepper to taste

2 slices multigrain bread

2 slices Swiss cheese

Optional: Sliced tomatoes or avocados

Toss together tuna, scallions, celery, pistachios and capers. Add yogurt and mayonnaise, stir until tuna mixture is evenly coated. Add Balsamic vinegar and Tabasco sauce, adding more to taste if desired. Season to taste with salt and pepper.

Toast bread. Spread tuna on bread, top with optional tomato or avocado slices, then swiss cheese. Heat in broiler or toaster oven until cheese is melted and bubbly.

Serves 2.
