Like pinwheel-cut sandwiches, the appeal of the Ribbon Sandwich is all in the fun new shape. The key to a good ribbon sandwich is the soft-baked thin-sliced bread. Up until recently, that meant your options were limited to white bread. But with the advent of "low-carb" breads, the landscape has shifted. To keep the carbs and calories down on these types of bread, manufactures have done a tricky thing, they've made the slices thinner, which means skimping on the nutrients. But luckily for us, companies like Rudi's Organic [0] Bakery have come out with "Right Choice," a low-carb, low calorie, highly nutritious multi-grain bread.
Ingredients
5 slices thin-sliced bread, 1/4 inch thick (try Rudi's Organic Bakery "Right Choice" [1])
Choose one of the following fillings (or make up your own!):
2 Tbsp. trans fat-free margarine (try Soy Garden Natural Buttery Spread [2]), mixed with 1/2 cup finely minced organic nitrite-free ham (try Applegate Farms [3]).
1/4 cup soy cream cheese (try Tofutti Better Than Cream Cheese [4] or light cream cheese). Mix half with 1/4 cup very finely minced green bell pepper and half with 1/4 cup very finely minced red bell pepper (you will alternate red and green layers). Sprinkle with a pinch of sweet paprika and kosher salt.
2 Tbsp. organic mayonnaise (try Spectrum [5]), mixed with 1/2 heaping cup finely chopped peeled seedless cucumber, sprinkled with a little salt and freshly ground pepper.
1/4 cup soy cream cheese (or light cream cheese) mixed with 2 tsp. honey, 1/8 tsp. orange zest, and 1/2 cup chopped grapes.
Preparation
Alternate layers of soy cream cheese, or nut butter, and fruit-only jam.
Distribute filling evenly between the four layers (you want it spread thin). Wrap sandwich tightly in a damp kitchen towel. Put in fridge and top with a weight (I use a cast iron skillet). Let chill and press at least 1/2 an hour. When ready to eat, unwrap, and cut into 1/4 inch thick ribbons.
Serves 2.
