We have completely renovated this historic 1840's building from the ground up, utilizing recycled and reused sources wherever feasible. New timber was sustainably forested and sourced from a local wood mill; the trim work and rail posts were crafted from the healing wood cedar. All of our equipment has been refurbished and is being reused.
Roots is committed to energy and-waste reduction. We use every vegetable and grain fully. What we cannot use to cook is composted on a nearby farm, along with much of the post-consumer waste. Oils used in cooking are saved to be reused as a fuel source. We recycle all cardboard, paper, glass and cans. We believe that these are just some of the efforts that will add up to be the change we wish to see in the world.
Most importantly, we believe that a vegetable centered diet is good for our health and environment. We strive to source locally whenever possible. For instance, we work with local bakers to bring healthy whole grain breads to your table, and some of our produce comes from a local organic farm. Our promise to you will be to accommodate any of your special needs to the best of our ability, and to prepare your meal as timely as good cooking will allow.
