Broccoli Sprouts: Better Than the Real Thing

We all know that full-grown broccoli is good for us. It’s got vitamins, minerals, fiber, and cancer-fighting phytochemicals, but underdeveloped it’s even better.

Broccoli sprouts are higher in glucosinolates and isothiocyanates — two phytochemicals that protect against chemically-induced cancer — than traditional broccoli stalks. Crunchy and fresh with a mild flavor, the sprouts are also a tasty alternative to traditional broccoli — and an excellent veggie stand in for those who hate greens. Unlike clunky adult broccoli, sprouts can be easily tossed in omelets and sprinkled in salads. They can also be used as a creative garnish for soups. Serious carnivores can even wrap the sprouts in prosciutto.

If sprouts just aren’t your thing, you can take broccoli sprout supplements. The recommended dose is 150 to 400 micrograms of sulforaphane — a by-product of glucosinolate. A serving of live sprouts is said to provide up to 100 milligrams or more of sulforaphane.

The only warning associated with broccoli sprouts and supplements is excess gas — a small price to pay.
