Its over my 30 Day Meat Challenge is over. Today is day 30, decision time. I have learned and grown very much in the last couple weeks. I have found out a lot about my boundaries and health issues. I am going to be Vegetarian the BEST I can, I am still after all I am: Anemic. I need some iron and other certain vitamins in my body. Until the day that I can totally drop meat from my menu I will be one happy camper! I have looked up some recipes online, but I have not found much. Anyone’s help would be greatly appreciated!

I found this on the Food Network. It is all about vegetarianism. Not only does it have some recipes, but tells you what vitamins you should be eating. Give the site a try and let me know what you think. I hope it helps you to stay motivated. I know I mentioned this before, but the magazine The Vegetarian Times is a wonderful resource to get. It's all about being a vegetarian, not just the recipes.
Oh I had forgot to tell you I did check out the Vegetarian Times Site and I subscribed to Vegetarian Times, I will get the first two issues for free, and after that I guess I will decide. I got a gift too! I can’t wait till it comes in the mail! I also subscribed to Cooking Light; they seemed to have some good healthy recipes on their site also. If it does HAVE to come down to it, and I will have to consume a small portion of meat just for my health’s sake, I will make sure it is not a lot, and that it is still healthy! Thank you for the link to the Vegetarian Diet on Food Network, and as you know I adore this site. I will be sure to use it soon!

I was not sure if you where going to make it all the way to day thirty, but I was rooting for you!
So I have to ask, are you going to set another thirty day challenge for yourself?
I think I might, I know that if I do decide to do another Challenge I will have to take more self control and get on a STRICT diet so I will not end up getting sick again. If I do decide to I will let all of you at lime know ahead of time, I am sure I will need help with my meal plan!
