i am always looking for ways to sneak more veggies into our meals.
would love to hear what others are doing to amp up the veggies!
currently i shred carrots, beets and onions and sneak them into burgers.
i made this one up when some friends of mine with many food allergies came over for dinner - yummy, dairy free, gluten free,
vegetarian and loaded with veggies!
Veggie Loaded Portabella Mushrooms
to make six large mushrooms or 12-15 small
shred three carrots and two beets in the food processor
stem mushrooms and huck the stems in the food processor
cook greens 1 bunch- any kind pick your favorite, i like kale in this recipe
saute until soft - huck into the food processor
add one jar/can of either hearts of palm or artichokes rinsed to the food processor
add six sundried tomatoes to the food processor
add some pine nuts (optional)
turn on the food processor until all ingredients are pureed.
fill mushroom caps with the "veggie paste"
bake at 350 for 20 minutes or grill outside

Think of the waste you are creating by getting your veggies the "easy" way. Ironic.

i bet if you cut up all the veggies really small and then used the blender you could still do the veggie loaded mushrooms and burgers.

i eat the beets raw - i use a potatoe peeler and slice thin into my salads
When I am grilling, I also grill up some extra veggies. I keep them in the freezer and pull them out in a pinch. We like to make veggie pizza with them. The other thing is we do a lot of pasta with veggies. Like broccoli chopped and put into the sauce. One day when I was in a pinch for soup I came up with this combo. I had a frozen bag of oriental stir-fry vegetables' that had asparagus, broccoli, peppers and carrots. I put in a pot with 4 cans of vegetable broth and added onions, garlic with a can of rotel tomatoes'. When the vegetables tender it still need something. I threw in some mixed pasta. I turned out great. We have repeated that many times. I also make a veggie rice casserole.
I get a good amount of veggies (and fruit) by making great tasting shakes. Patricularly, I make Kale shakes in the morning with banana, mango, goji berries and some other stuff.....GREAT way to start off the day!
with bananna, molasses, an apple, pumpkin and apple cider.
