Watercress can spark up you salad and possibly protect you against cancer. Studies show that eating the veggie daily lowered DNA damage in healthy adults. The veggie is crisp and peppery and you can add it to salads and sandwiches. Don’t be shy with it. By using it, you can increase your blood levels of the antioxidant lutein. A restaurant I go to makes there Greek Salad with it, a good twist to an old favorite. Any more ideas?

When I was living in England in the 80's, a great little Chinese restaurant made the most amazing tomato eggflower soup with stewed tomatoes (I use fresh heirloom toms and cook them in broth long eough to soften them down) a healthy helping of watercress added at the last minute, just long enough to wilt it, not long enough to destroy the enzymes in the herb. You can use a fortified veggie broth (I like Imagine Foods brand) instead of organic chicken if you're vegetarian, but the eggflowers, IMO, are essential...though I suppose you could subtract them for a vegan dish. Very healthy and fortifying on a crisp autumn evening and lots of Vitamin C!
