Tofu

Thanx Statuesqueone!!  I watched the video and jotted down the ingredients but was curious about actually printing the recipe.  I did make it and it was very good - though I had bought already cubed tofu and it seemed to get done faster that they indicated on the video.  It really was yummy!  I'll wait to see if you hear anything.

One of the ladies made a good comment about trying to get the kids to eat the tofu. my answer is camouflage it. serve it with a flourish and don't mention the "t " word.

I think that the dish looks a bit dry....needs more sauce/liquid. Why not use the tomatoes to create a sauce, instead?

The recipe

Hey jmg, Got the recipe from the Lime staff... here it is:
Hot Savory Baked Tofu
Ingredients needed:
2 blocks of Tofu (coagulated with ngari) (cut into cubes)
2 cups Whole wheat couscous
2 tbsp olive oil
3 tbsp tamari
1 onion med (coarsely chopped)
1 garlic sm to med (chopped or chunks)
In a bowl or baking dish prepare all ingredients.
Preheat oven to 375 degrees
Let couscous stand in water for 10 minutes.
Mix ingredients so that all ingredients are evenly distributed.
Bake Tofu, olive oil, tamari, onion, and garlic for 1 hr and half at 375 degrees.

After baking add:
1 tomato (chopped) or a handful of cherry tomatoes (chopped / halved)
Sprinkle of cilantro.
Viola, you’re done!
