Who Says Fresh is Best?

Not Ariel de Guzman. The former U.S. Navy cook, who has catered to the culinary demands of George and Barbara Bush for more than twenty years, has just published “The Bush Family Cookbook. Mr. Guzman believes that “canned or frozen vegetables have more nutrition than fresh vegetables. It’s added from the companies, the manufacturer.

You might want to take Mr. Guzman’s notion of good nutrition with a grain of salt, though. If a casserole that calls for frozen peas and green beans plus three cups of mayonnaise and heavy cream is any indication, heart-healthy cooking is not Mr. Guzman’s forte. And you won’t find any recipes for broccoli, frozen or otherwise.

But can frozen vegetables really be better for you? The answer is a qualified maybe. Even Mark Bittman, writing from his lofty perch on the food writer food chain, has admitted that frozen vegetables have their merits. Still, I doubt you’ll find any recipes calling for them in Bittman’s new cookbook, “The Best Recipes in the World.” After all, he’s the Minimalist, not a masochist.
