Bison In The House

After nearly disappearing, the bison’s expanding its range from the heartland to the White House, where Charles and Camilla dined on buffalo medallions at a dinner in their honor last week.

Buffalo’s even roaming on the edge of the exurbs at a bison farm on Long Island. According to owner Ed Tucchio, who’s been raising bison since 1984, “it tastes like meat used to taste before they started adding growth hormones and steroids.”

Ted Turner’s high profile herds have helped spread the word about the health benefits of buffalo, which has roughly one-third the fat of beef. Bison’s also lower in cholesterol and calories than pork, salmon and chicken.

Turner, reportedly the largest individual landowner in the country, has a nationwide chain called Ted’s Montana Grill whose menu features plenty of buffalo. Ted’s will soon give Texas its first taste of the bison based cuisine when it opens a branch in Sugar Land, home to beefy former bugman Tom DeLay, the perfect candidate for a leaner cut of meat.
