When it comes to eggs, the farm fresh variety is remarkably richer in color, taste, and texture than eggs that have been pasteurized and stored for weeks on end. In fact, the difference between a farm fresh egg and the supermarket kind is just as dramatic as a homegrown tomato and a store-bought one. Unless you plan to raise chickens in your backyard, you may have to search a bit for farm-fresh eggs. If you're having trouble, go on the web and Google your state's department of agriculture. Look for links to farmer's markets, farm co-op stores, and local stores run by the Independent Grocer's Association. Truly fresh eggs are often just a phone call and leisurely Saturday drive away. Breakfast will never taste better!
