Sunflower Fruit Balls

Fruit Ball

(Vegetarian, Vegan, Wheat-free, Dairy-free, Nut-free, Refined Sugar-free)

These energy-packed little nuggets are high in Vitamin A, Vitamin C, phytonutrients, and fiber. Sunflower seeds are an excellent source of Vitamin E, and provide added protein. Cocoa powder is high in antioxidants. And best of all, kids love to help make these hands-on treats. So sit back and let them do the work of rolling their own snacks!

Ingredients
1 cup wheat-free whole grain cereal flakes (try Arrowhead Mills, Nature's Path, or Health Valley)

2 Tbsp. unsweetened cocoa powder (try Scharffen Berger)

1/4 cup tightly packed chopped apricots

1/4 cup tightly packed chopped raisins

1/4 cup tightly packed chopped dates

1/2 cup sunflower seed butter (try SunButter, or Trader Joe's) (if your child CAN eat peanuts or nuts, you may substitute smooth peanut butter or another smooth nut butter)

2 Tbsp. light agave nectar (try Wholesome Sweeteners) or honey crushed cereal

1/2 cup Enjoy Life semi sweet chocolate chips or crushed wheat-free whole grain cereal for coating balls

Preparation
Put cereal in a large zip-lock bag, and roll with a rolling pin (this part is great for toddlers). Once cereal is finely crushed, combine with cocoa powder in a bowl. Add chopped fruit and stir vigorously to combine. Add sunflower butter and agave nectar/honey. Stir until completely mixed. Put a little mild vegetable oil on your hands (canola, safflower, etc.) and mold mixture into small balls, the size of a teaspoon. Put crushed cereal, Enjoy Life chocolate chips, etc, into small bowls or ramekins. Roll the balls in coating. Place on wax paper and cover. Chill at least 1 hour.

Makes 20 balls. You may also freeze and save some for later if you wish.
