Demand for Organic Food Outstrips Supply

Though organic products still represent only 2.5 percent of the nation's food market, that slice is expanding at a feverish pace: America's appetite for organic food is so strong that producers can't keep up with demand.

..that the demand will only grow stronger for other products as well and raise the standards of what we eat and convince big business to invest in more organic farmers and pay them what their now highly demanded crops are worth
