In another lifetime, I went to culinary school. Well, it really was only about four years ago, but it seems like another lifetime because I was single, living in New York City, and experiencing a minor career crisis in which I thought that maybe becoming a chef would be a good move.

Great tips. One question first, what is an externship? I have not heard of that before.
I know that racel Ray is always talking about the garbage bowl and when I have used it, I must admit it makes life easier. I would think culinary school would be exciting, but I hear that working in a kitchen is a lot of work.
Unfortunately I've already commited to replacing all the butter and salts in my cooking with spices and herbs, a little health project. My family has a big history of high blood pressure and heart disease so I'm going cold turkey on salt and especially butter, at least for a while.
But I love the idea of a garbage bowl, I didn't really think about it. It's very convenient.
I must admit I haven't started composting yet (the novelty of having a yard in which to do so is still new), but we do produce a lot of waste that would make great compost.
And of course, Jeremy Lehrer's blog will give everyone ideas on how to get started.
Someone posted below about being squeamish about it being under the sink-- I'm sure it would be easy enough to compost in the corner of a yard and just transfer the day's scraps to the pile every day, before things start smelling!

Worm bin under the sink? Kitchen sink? How does that work? Does it attract other critters? I'm trying to turn green, HELP!
It looks from your profile like you're in California. The California Culinary Academy is supposed to be good, as are the Cordon Bleu schools and the Art Institutes.
And of course, the Holy Grail of all culinary schools is the Culinary Institute of America, which has a campus in Napa.
Since this all popular movie came out, can you do a story on this Niçoise dish?

I do understand that compost bins under the sink aren't very conventional but there are ways of keeping them clean and with an earthy and pleasant odor. I've been thinking about starting a vermicompost bin like Jeremy did. Thing about worms is that they like being in cool and dark places that are quiet so it's most convenient to have it inside.
But I understand that it might be somewhat unpleasant. Composting outside is more effective though. :) I agree.
I use a brand called Smart Balance butter. It really is a vegan butter spread, but I swear it is delicious and tasted great. My kids adore it and my husband even eats it. I've turned friends onto it. You shouldn't have to give up everything to be healthy. Just a little more research is the key.
